Ingredients
  • 4 cups low-fat low-sodium chicken broth
  • 4 tbsp white vinegar
  • 2 tbsp soy sauce
  • 1 tbsp crushed red pepper
  • 2 tsp sesame oil
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced carrot
  • 2 tsp arrowroot
  • 4 tsp water
Instructions
  1. In a stockpot, combine the broth, vinegar, soy sauce, crushed red pepper, and sesame oil. Bring to a boil, then simmer for 10 minutes.
  2. Add the mushrooms and carrots and simmer for 10 more minutes.
  3. Combine the arrowroot with the water. Add the soup and continue to cook for 5 minutes, until it thickens.
